As the mist rolls in over the Bottelary Hills, it softens the valley, and everything feels a little quieter, a little slower.

Their vineyards are resting now, but there’s so much happening beneath the surface - the soil is rebuilding, the roots are drawing strength and the land is preparing for the growing season ahead.

This is where good wine begins, even when nothing seems to be happening.

Winter calls for something rich and layered. The new vintage of Estate Vineyards Cabernet Sauvignon 2023 rises to the moment: structured, elegant, and unmistakably Stellenbosch. Crafted with care and clarity, it brings intensity and poise to the glass, echoing the hallmark style and offering both immediate pleasure and cellaring potential.

Winemaker Danielle le Roux describes it perfectly: “Lavender, black currant, cedar, and vanilla on the nose open into a layered palate of cherries, graphite, espresso, and dark chocolate. Youthful tannins and bright acidity provide lift, with a lingering cherry finish.”

Whether poured beside a fire or paired with a slow roast, this Cabernet anchors the season with warmth and depth. It’s a reminder that winter’s finest moments are best marked by good food, great company, and a remarkable glass of wine.

From the top of the farm which meets the Helderberg Mountain, right down to the bottom where our vineyards end, the expression of the soil and stones change.

At the top is rocky sandstone, on the mid-slopes is decomposed sandstone, and at the bottom is koffieklip. These varying soils have different impacts on the vines' growth and how the loved Cabernet Sauvignon variety expresses aromatics and flavours.
